We make these bars from either Itenez or Tranquilidad Estate cacao. Tranquilidad is the second cacao designated with "heirloom" status (HCP#2), while Itenez is the closest I've tasted to Alto Beni (HCP#1), which is no longer available. All three chocolates are produced by Volker Lehman from rare Wild-grown Bolivian cacao. The chocolate's big, bold, and fruity. The bar is easy to eat and quintessentially chocolate.
